The Forbidden Casu Marzu

It’s no wonder that Casu Marzu, an unusual cheese, is banned worldwide. This pecorino cheese hails primarily from Sardinia and boasts a rather unconventional ingredient—maggots. While it may not look repulsive at first glance, this cheese is intentionally prepared to attract and nurture maggot colonies, synonymous with putrefaction and decay.

In Sardinia, the production and consumption of this cheese have been declared illegal. To sample it, individuals must resort to covert channels, almost as if procuring contraband.
